The big update on Nov 11 2021 for Skyrim's 10th anniversary
How do we avoid having our modded Skyrim games getting broken by the update next month?

While I have heard of that, it is risky to go that with method.
It is only for making sure that It can't get updated if the update bypasses
settings, of which only fallout 4 has got those from what I remember.

Get ready for the massive influx of "WHAAAAAAH.... AE Skyrim brokeded mah game!".............

First of it is the separate update not AE that would do that, second we are already ready.

If I Set to only update when launched - and then play it through Steam in "offline mode" only, will that work?

Of course, but set to update on launch and launch through SKSE64 will allow you to run it
in online mode.

We are always ready, we have been ready since the monthly CC updates started yet that doesn't seem to stop some people simply not following well detailed instructions plastered all over the place.

Every update like clockwork the forums got flooding with people (sometimes the same people) that whine about their game breaking because they failed to follow directions.

It is going to happen no doubt, lets just hope it isn't too much.

If you mean if SKSE isn't installed, then you don't have to care at all.
I mean the game is nowhere on my SSD/HDD. Its not installed and I don't plan to. Yet I don't want the update to ruin potential mod installation which I may eventually run into.
Then simply wait until after the updates go through, and SKSE64 and other mods have been updated to match the new version.
