Find a version that works for you and then leave it be for your playthrough. Also, yes, if your system needs it, do keep the performance options in mind.

Stormsong and Vlad have some great points.
I run 5.0 and have not updated since 5.0. I will update eventually but as Stormsong mentioned, best wait until my current game is done before I upgrade.
I've been running 5.0 since summer of 2020 with only one glitch that I have seen. I have two purple light poles on the road on the south side of lake Ilinata. They don't harm anything and just serve to remind me that I'm almost home.
For newbies, mind the load on your PC. I'm running an i7 6800 with a 1070 GTX and have few issues. When I encounter a large battle of Stormcloaks vs Imperials I do see some lagging but only under those circumstances.
I don't think I can push any harder on my rig.
I do also run other mods that can and will impact performance so Phushers is not completely responsible for the tax on my PC.
I expect an updated Phushers to be in my next load order as well. IMO, it's a fine mod and really helps make Skyrim beautiful.
Also, remember that you can change meshes and textures every time you want during a game usually with 0 consequences, so if you pick Pfuscher now and decide to change, there is no issue.
In the worst case you will have to regenerate the lod, if you use lod.
I use Pfuscher as a base, and let other textures overwrite it like this: https://prnt.sc/10r467x
I also use a custom made 2k version, because my videocard can't handle 4k and 8k textures with high FPS. You can download the one present in the options, I have made my own version because I trust my skills more.
