I am assuming that some quests caused a crash to desktop, (fly out). Could you elaborate on which specific quests?

Steam Workshop is not available for Skyrim Special Edition. The title page has a link for mods from Bethesda, who are this games developers. You may also obtain mods from Bethesda's Creation Club which are Bethesda approved player-made mods.
Deleting Visual C++ and the in-game mod links can be detrimental to your game, and will likely cause crashes.
This game does have its share of bugs which many may be resolved by installing USSEP, Unofficial Skyrim Special Edition Patch. There are also mods that will help keep townspeople alive during a dragon attack. (And vampire attack). But using the console command 'resurrect' is not the correct way to alleviate the problem. There are also several good mods for managing your horse, using the console for this is also not advised.
'Magic addons', are you referring to mods? If so, mod authors are not anonymous. Many in fact welcome comments on their mods.
Yes, I have seen draugr in dungeons with female bodies and beards. I believe the Unofficial Patch mentioned above rectifies this.
In the vanilla game, guards do not 'constantly utter offensive comments'. There must be some other issue here.
I will agree that the developers released a somewhat buggy game. But with the proper patches/mods you should only rarely have the need to use the console.
