I'd use none, I've used to go for full iMmErSiOn back in Oldrim constantly, but these types of mods have always given me more headaches than actual good time. I've used basic needs for a while than got fed up with it (it's maddening getting gimped and forced to waste time fiddling through inventory to get fed, or constantly being interrupted mid-dungeon to take care of needs) so I ended up purging all of them except for Frostfall.
After another while I've started to install Frostfall but avoid activating it, and when I did I would always tone it down to almost nothing (it's effects), in the end I've realized I was wasting both Load Order slots and script load on Frostfall for no reason, so even that mod (which I used to love) became just noise, and I tend to ignore them all.. They may be fun and increase the depth of the game if used isolated, but when you have heavy Load Orders with tons of meaningful overhauls that require scripts, those types of mods become very irritating.
Even some lighter "iMmErSiOn" mods that used to please me a bit like Keep it Clean are more of a hassle in my book now-a-days
TDLR: Don't use any. These types of mods are more of a headache than an addition. I still use Campfire, and I still eat food by using Cooking+Alchemy overhaul (they actually give some utility to eating)
