Are you maybe talking about the Red Eagle quest? That one's started by reading the book about his legend.

It is a nexus mod but the listing mentioned the book and quest but did't say where?

The book is located on an eagle somewhere outside of Riverwood. It may be hard to spot, it's near the path.

Uninstall the mod, restart your game and make a save, reinstall mod, start game up and start the quest again.

The eagle is dead, on the path south out of Riverwood(so towards Helgen) on the left a little was there should be a dead eagle. Alternatively you can check the Original mod page for Oldrim and see the exact location in a screenshot.
