^This has them get the hell out of there and go indoors if a dragon or vampire attacks.

If they're dead, I'll typically reload to an earlier save (if you're only keeping one then you're doin it rong!). Especially with vendors, there's no guarantee that they'll return to their normal operations if you attempt to resurrect them.
The stop NPCs from dying in the first place I use No More Redshirts,[www.nexusmods.com] which leaves nothing to chance.
The only other way NPC's have died on me was when I turned off the game's VSYNC and turned on Nvidia's...had an NPC load in too high in the air and she fell to her death...had to revert the settings and go back to an earlier save. No...I did not get to see it...just happened upon the body in Whiterun.
