To see your current hunger rate type:
show Survival_HungerNeedRate
To change your hunger rate type this, with a number in place of "X":
set Survival_HungerNeedRate to X
The default hunger rate is 10, the bigger the number, the fast you'll get hungry. Changing the rate is not permanent unfortunately, you have to type the change hunger rate console command each time you boot the game.
You can just change the timescale of the game, which is a permanent command, set it once at the start of your game is stays that way forever. Hunger and Sleep are tied to the timescale, it will go slower the lower the timescale goes.
The default timescale is 20, going to 10 will double the day length, and double the time required to eat and sleep. When altering the timescale, do not go below 6, too low will cause Issues after awhile.
The command for this is
Set Timescale to 10 (Or whatever number you want)
Survival mode does not scale with timescale.
Sleeping 1 hour if Timescale is set to 1 for example has you immediately starving.
