Does my weapons and armor Level with me?
Sorry I'm so full of questions, but I'm very new to Skyrim and you all have been a big help to me so far.

Do weapons and armor level with me? I'm trying to imagine my endgame build and I just want to know if I'm at a disadvantage if I start skyrim daedra quests too early. I really want to be able to have good gear, and I don't want to be gimped if I should be waiting on doing a quest if I get a weaker reward.

no gear dont lvl with you, only enemies does
you items stat, dmg/armor will rise a bit with you as you llv, but not because of "your" lvl, but because you are rising the skill lvl
once you reach 100 in either weapon or armor skill your gear wont lvl with you anymore, and you need to upgrade/get new to get any increases
static stats, affected by perks, and enchants, thats it check the wikia or UESP if you want to see wepaon/armor base stat to get an idea of what you want/need later on

What about the daedra weapons and armor? I just got spellbreaker at level 20, and I'm not sure if I have the best stats on it? Or do they already come with the best stats upon completion, no matter your level...?

Your worn equipment doesn't change unless you practice smithing and/or enchanting. Daedra quests give you the same thing regardless. If you do smithing and enchanting you can make seriously powerful stuff no matter where in the questline you are.

The only way level impacts gear is on some quest rewards or chests. If you're high level you might get an upper-tier reward like and ebony mace, but if you're lower level you might just get a fancy steel sword.

Skyrim isn't nearly as punishing as some games as far as equipment since you can beef up pretty much anything you find. My last playthrough I never went past Forsaken light armor, I just kept improving it as my smithing skill got better.
unique items such as spellbreaker cant be enchanted, some of them can however still be upgraded at a workbench/BS so on
only "clean" items, can be double enchanted and 100% BS upgraded to legendary, some specila/unique items cant even be upgraded via BS
Daedra Armor set, if memeory serves is the one with highest armor rating ingame, even surpass dragonbone i tihnk, but is ofc heavy as heck,
you can craft it youself once you reach teh BS proficiency but it wont start spawning naturally in game until 45+ i think, wich is why its so powerful to manage to craft on earlier lvls,
same with weapoons ofc, but they are a bit more tricky since some uniqie weapons are quite good despite not being able to be encahnted of fully upgraded via BS, depends on what weapon and lvl playing at

certain unique items will vary stat depending on lvl recieved
something like Nightingale armor/weapons and Dragonbane all have diff stat lvls depending on waht lvl you got it,
99% of unique items tho have a fixed stat no matter what, some are great, despite not being upgradable, some are only good to a certain point when you are able to craft better yourself with double encahnts and legendary upgrade

tbh weather or not you want crafted vs unique items depend mostly on your playstyle and skill/perk availability

if say you are a sneaky archer that has no need for daedric armor, but you have not lvld enchanting +alchemy yet, getting unique items with +bow dmg and sneak so on might be better than just crafting something heavy in BS if you cant encahnt it yet
like if being a dagger wielding type you cant get better gloves than teh assasins since tehy double backstabs, and daggers dont benefit from +onehand dmg enchant

if you are a "knight/warrior" type, its usually always advisable to lvl BS+enchant+alchemy and get proper perks to craft your own stuff since that will in teh end be "the best", but not like its "needed", stuff like Dragonbane for instance are still very very good despite dragonbone/daedric offering technical superior stats
