far to many great ones, just go to nexus most popular all time and you will find plenty of opinions of what people love.

I just tend to go for texture mods, and ones that expand towns cities dungeons etc and just add more stuff and places to explore.

Tbh there's far too many to list, I personally have 592 mods running on mine, so far.
Just decide what it is you want to achieve (do you just want to improve graphics, or add more quests, change the landscape, fill the world with big titted sloots?) then check the first couple of pages or so of 'popular of all time' mods on Nexus, and check YouTube for mod reviews to get an idea of what else is out there. Also check in the discussions for guides on how to properly install mods if this is you first time doing so?
