So, although they might be a bit off their prime fighting condition, I suspect they spend quite a bit of time keeping themselves in shape to deal with the next "would-be" Jarl to come along.
I'd be skinny too.
Fat People are predominately found in lands with easy agriculture, while some do exist in lands with poorer soil (like Skyrim) they are usually rich and powerful. However in Skyrim the powerful have to defend their power from challenges, so being fat would be asking to get killed in a duel.
Rich merchants would transfer their business headquarters out of a cold hard country like skyrim pretty fast, long before they become fat, and those who become fat first.... Well bandits, wild animals, Falmer or ambitious underlings would kill them off.
Non-lorewise it's just overuse of generic builds, no real variety.
The Diversification of Skyrim mod will have to do for anyone who really wants to see more body types around the setting.
