EDIT - @BlueAuran: see you posted the link for the collection on Nexus -
(though this is not really the place for people to comment on what should be added to your collection)
@Nox Tenebris
A knowledge of basic modding and how to go about it is always a good thing, however, it is true that some people really just do not have the time available. In that case, refer to NExus collections. These are pre-ensembled sets of mods that you can use. For more information on this, and a list of available collections, go here:
https://next.nexusmods.com/skyrimspecialedition/collections
One thing to take note of is the Success Rating for a collection. This rating is the percentage of users saying that it is working as expected - so you would want to use one with a very high success rating. Just be aware, that if you encounter a problem, only the individual who put the collection together will be able to help you with it, as only they know exactly how the collection was put together.
Of you do want to know just the basics of modding, there is this:

ONE last good aside tho for the OP and anyone else who may wish to know, THIS "Enderal: Forgotten Stories (Special Edition)" as the title now infers, IS workable with the SE edition right out of steam, so I will PROBABLY download this first before even playing with the Nexus idea next. You know it is funny, I am KIND of going against my own advice here, I always recommend a first playthrough without any moddin, just because of all the complexities. Yet I kind of want to balance that advice more for people with mounds of experience, probably going to regret my waffling here, hah!
So yeah, my GENERAL rule is avoid moddin on first playthroughs, so MAYBE I will do that by just playing Enderal or something first, then move to the base game with just the patches from the community (this is kind of the opposite of modding in some ways as far as stability goes usually).

Definitely worth checking it out to see if a modpack you want is there, and then adding what mods are missing for you. Most of these packs have dedicated discord servers (or just join Wabbajack's official) and you can ask people what mods work well with different modpacks. It has a pretty active community.
1) People mistake the person who put the mod pack together with the Authors of the Mods.... Putting together a mod pack is not a hugely complicated task, creating a mod is, and people should know who the Mod author is.
2) You are trusting in someone else to do the legwork, each Modlist is put together to work on a person's computer, no two systems are identical, and what works on one does not necessarily work on another. And because someone else has put it together you don't know how to fix it.
3) If you run into issues the place you are going to go is the page for the modpack, except 90% (being generous here) of the people who put the mod packs together don't know how to fix any issues except the ones they encountered putting the mod pack together, so they will tell you to ask the mod authors, except you don't know which mos is the problem or where the mod pages for the various mods are....
So in summary, good luck with that.
As for the "only on one computer", that is also ♥♥♥♥♥♥♥♥ because they all get testers before releasing the modpack to the community, something that is required for Wabbajack to let you advertise your pack on their platform.
So, in summary, you are so pointedly wrong.
