Erm... lost housecarl?
I became the thane of Morthal so I could get the plot of land right by it. I succeeded in becoming thane and building the house fully, but now I can't furnish my house (I think you can do it yourself, but I'm lazy) and I can't add horses, chickens, cows, etc., and this is because I lost the housecarl. He won't spawn, no matter what I do. Any help would be amazing.

Get any follower - many of them may be appointed.
Not only housecarl may be a steward.

This one has a tendency to wander off but will come back. Think he may have a wench tucked away somewhere.

Forget livestock at this home, they get killed constantly.

No more so than at any other home. I don't believe I've ever lost anything there in fact.

What's they guy's name? You could probably use console commands to spawn an extra or teleport to him.

It's Valdimar.

And yes he does have a tendency to wander the grounds. He's also a fairly good sorcerer-type follower from what I remember of using him in Oldrim.

PS - he might still be hanging out at the Jarl's place in Morthal if you can't find him. Maybe you didn't actually have the conversation with him about becoming steward.
