Turn Undead enchantments, or banish daedra work wonders weapon wise. Sneak and pickpocket are another good one for the other slots also.
For alchemy, I notice that it might depend on the ingrediants when making a potion. But most of the exp comes from potion crafting. Especially from "unknown" effects.
For alchemy, I always do it by looping through four or so cities and clearing out all of the alchemy vendor's stocks, selling back potions to get my gold back. Great for both alchemy and speech.
I do the same with enchanting, looping through cities buying filled soul gems and selling back enchanted weapons. I make tons and tons and tons of legendary dwarven bows of banishing. By now, every man, woman, and child in Skyrim should be able to send Daedra back to oblivion.
A good trick is to do the Aetherial Crown quest as soon as you are capable of killing the Forgemaster (bring potions if you need). Then you can get the Lover's Stone + guardian stone + rested bonus (unless you're a werewolf, in which case just the first two). That means you can get a 35%, 45%, or 50% XP bonus on your skills depending on whether you're a werewolf and whether or not you sleep in your home with a spouse.
Since all the locations for this quest are dwemer, it also acts as a decent source of dwarven metal.
Isn't that cheating?
Complete crafting overhaul had the same thing. Very minimal XP gained from picking ores, smelting equipment etc. To me it makes sense. (Again the xp gain was minimal)
To the OP. At least for smithing and enchanting, the progress depends on the worth in gold of the final product. So Jewelry for smithing, amulets of fortify archery for enchanting, etc.
Alchemy?
Off the top of my head, paralyze potions are worth a lot
