So how many times can i set s kill tree to legendary?

And what do i get out of it other than the ability to redistribute my skill perk points?

For example My smithing skill has a number 2 beside it and i have maxed out that tree yet again. One thing that seems to be is that i can improve leather armor to make it legendary leather armor. Something i couldn't do before setting my smithing skill tree to legendary for the second time.

And i got to say, that stalhrim deathbrand armor is looking rather sweet after having been improved with 2xlegendary smithing skill tree that's been maxed out a third time.

So my question i guess is when do those kinds of bennies stop ? If i grow my skill tree to 5x legendary - other than perk points what advantages continue to present themselves?

Is there a defined list somewhere foir all the skill tree sets?

Legendary status has no impact on the skill's effectiveness. I can make legendary leather armor without making the smithing skill legendary.

You can keep resetting a skill. There is no limit.

The advantage is that you can keep leveling up and that you can keep earning skill points (plus improving health, stamina, magic).

exactly this, in order to have all the perks you will need level to 251 if not mistaken, for this you will need to make legendary on skill 400+ times or 8 times each skill

No limit as to how many times you reset a tree.

Level 81 was max level before the change where as now you can pass 81 and acquire more perk points to spend with each level you gain along with a boost to health,magic or stamina.

Its basically infinite. Only thing to think about is that you have to start over with that skill. Investments from the speech perk don't go away either.
