thinking of building a warrior conjuration or illusions.
I was thinking of building a warrior with restoration then also choosing conjuration or illusion. I was wondering which one do you guys think is more enjoyable?

being able to silence my footsteps with illusion will definately help with the guilds that require subtley when i'm running around in heavy armor lol.

There's nothing stopping you from using Muffle and conjuring up some Atronach at the same time. Just time your spells correctly so you're not out of Magicka when you get into a battle. Muffle lasts a fairly long time, so you can cast it as soon as you enter an area and then just let your Magicka regenerate before you go attacking anyone. That's how I do it, and there's rarely a problem with being able to use a Conjuration spell when I need to.

Improving 'sneak' will help with having a low profile, so if that's your main concern I would go for a combination of sneak and conjuration.

Illusion and a warrior type of character don't necessarily conflict, but using calm or fear on somebody that you are going to fight with sword or ax, doesn't really work.

Just because a character is a Warrior type doesn't mean that they can't be sneaking around as well. It would be rather foolish to give up on the 2x damage when using a bow.
