Each child also has its own unique dialogue options, and will offer up its own unique banter. So it is highly likely that there is a child within skyrim that actually plays the instrument you want for them to play. I honestly don't remember ever being able to give them an instrument. That being said there is a slim possibility that you might be able to gift them a named instrument. I have noticed that I am allowed to gift my named dagger to any child.
As far as animations go It depends on which Idle Markers are present in a particular cell. Also, the list of possible gifts is the same for every child.
