Racemenu has always been buggy for me in SSE, so I never really use it. I know a lot have had success with it and given time they will respond. You just have to be patient and check-back
edit: You should actually be posting this on the Racemenu page on Nexus. Check there, maybe someone has already reported the same problem
https://www.nexusmods.com/skyrimspecialedition/mods/28574
Edit: Here's the name of the mod:
Better Female wrists hands ankles and leg ratio twists for XPMSSE
Edit 2: There is a fix with xedit in the comment section of above mod
Edit 3: Last update by Mod Author seems to have fixed this issue
First the issues is not a racemenu problem or anything it just a case of the body weight and sizes being edited by a mod like an npc mod and the hand are different asset.
so what you need to do is download Bodyslide and outfit studio:
Se: https://www.nexusmods.com/skyrimspecialedition/mods/201
Le: https://www.nexusmods.com/skyrim/mods/49015
and run it via the tool menu on for example Vortex.
here is a janky video I made to explain it:
