This is a hybrid build that looks like what everyone ends up with in Skyrim.
That's what a Paladin is, a hybrid warrior/priest.
OP, I'd honestly skip Alchemy entirely and maybe even Enchanting (you are stealing souls and using them to power enchants after all). Just pick up Smithing instead if you want. You really don't need Archery for anything except making dragons land faster; they do on their own anyways, so it just speeds up the fight. Paladins aren't really known for being strong ranged fighters in most games; it's the price they tend to pay for defensive/healing spells.
I'd build like this:
Major Skills (many perks)
-One Handed
-Heavy Armor
-Block
Minor Skills (few perks)
-Restoration (Could be Major)
-Alteration
-Smithing (or Enchanting)
-Speech (Paladins are usually Charismatic leaders)
Gear wise I'd say Dawnguard Heavy or Steel Plate fit the look the best. Ebony works ok, depending on who your patron deity is. Regular old Steel works until you can get one of the above.
A good RP companion is Erandur since he's a Priest of Mara but it's too bad he kind of sucks (never gains Magicka from levels). I'd honestly just run without a companion, but personally I hate using them at all so I'm biased. The only other priest companion that I can think of off hand is... whatshername the Dunmer Priestess of Azura. Obviously she'll only work with certain patron choices.
The key to RPing a Paladin is who, or what, you're a Paladin OF. A Paladin of Meridia is going to be different from a Paladin of Stendarr. They'll have some similarities but that Paladin of Meridia is going to end up using Dawnbreaker while the one of Stendarr likely won't for example. A Paladin of a more martial god like Talos may even use a two hander instead of a sword & board build.
A paladin might have weapons and armor blessed, but enchanted feels a bit less holy to me.
For the same reason I'd also say no to the college of winterhold questline, too magicky and not enough praying.
For armor I'd say dawnguard for the realism or ancient falmer for the fantasy white knight vibe. You could also try mods: Artifacts - Breton Paladin Armor or MERPs Gondorian Armaments might fit the bill.
