Now, for immersion, there's quite a lot out there. Probably the most famous is frostfall, which makes it so you can actually freeze to death in Skyrim's climate. There's also more than one mod that makes so you actually have to eat and sleep. iNeed and Realistic Needs and Diseases I think are the most popular. There's also a few bathing mods out there, though they tend to have compatibility issues with city mods since such mods often necessitate adding new buildings and rooms to the game (for obvious reasons). As for mechanics, there's quite a few different combat and perk overhauls out there to choose from. I haven't seen too many that touch on the economic of the game though.
Though if you're looking for overhauls, oldrim offers far more choices. Its surprising how many there are from the early years of this game that were never ported. For instance, if you want a werewolf overhaul, your only choice in SE is Tales of Lycanthropy. In oldrim, you have dozens to choose from. As for ToL, its not really a port, but a new mod that borrows features from multiple oldrim mods (mainly moonlight tales and heart of the beast, if I remember right).
If you want an all-inclusive package though, I would recommend looking up enaision's stuff. He has multiple overhaul mods that are all designed to be inter-compatible! Even individually, his overhauls mods are some of the most famous. Though honestly, his overhauls are more about improving the gameplay rather than improving immersion.
If you download all of those, your game will look very beautiful.
And yeah, there's realistic water 2. I think that's the only real water mod out there to choose from, so its kinda your only choice. SMIM is also really popular, and it alone makes a world of difference. As for lighting, I think I use Realistic Lighting Overhaul. I also use that texture overhaul that's on the list of 'most popular mods'.
I don't have any grass mods installed though. The one time I did have one installed, it made my game lag really bad and crash constantly. Also, its kinda hard to really differentiate the different grass mods out there. I mean, seriously, they all just change how the grass looks. You really can't tell much of a difference between them.
