Deleting mods often requires starting a new save as mod data is tacked onto the save file.
Bare this in mind if someone suggests a save cleaner, since with knowledge of how the encoding works the makers can't clean saves.
So, potential solution: start a random fight, get hit once to make sure you're still invincible. Go into your inventory, and take off EVERYTHING, armor, weapons, rings, whatever, strip your character down completely. Close the menus, see if you start taking damage normally again (maybe lower the difficulty so you aren't dying too quickly). If you are, then you can start putting equipment back on little by little to see which piece of equipment is causing the issue.
If it's not the equipment, then something else is going on with the game that I don't know how to help with. But hopefully this helps someone.
