Questions around Morrowloot Ultimate

So I'm building my SkyrimSE right now and I'm considering using Morrowloot Ultimate. But I have a few questions a Morrowloot Ultimate veteran hopefully can answer:

1.)How hard is the mid to late game? Easier/harder than vanilla?
I'm afraid of being too strong after a while and get bored.

2.)Should I install the optionial file "MLU-Encounterzone Update" aswell or is it for high level characters only? I need more information about this (It's an additional file, found on the modpage. It has an article which describes a few changes, but I did'nt help me that much)

3.)In the "MLU-Encounterzone Update" article the mod "Encounter Zones Unlocked" (it's a seperate mod) is mentioned. If I want to install it, should I put it below Morrowloot Ultimate and the MLU-"Encounterzone Update"?

4.) I want to have a consistent challenge throughout the game. Which of the three mods( "Morrowloot Ultimate", its "MLU-Encounterzone Update" and "Encounter Zones Unlocked") should I install? All of them?

5.) Should I use the "125 Skillcaps and 0.5 Leveling Speed" optional file aswell? It's highly recommended, but I'm using the "Ordinator" perk overhaul aswell, though.
I will have more Skillpoints in the end, if I use this addon, won't I?

It's not Morrowind, It's Morrowloot Ultimate. A mod for skyirm lol. If you don't know the mod you are most likely not the targeted group for the question.
