strict warrior only build
you are ONLY allowed to use "combat" skills. magic and stealth are out.

CONDITIONS:

you can barter, but only with smiths/general goods

you can enchant, but only combat-related enchantments (no magicka, no soultrapping, you must find a gem to enchant with)

archery is allowed in open combat (no sneaking)

you cannot lockpick chests yourself

my problem is how i can survive combat with no way to heal (unless you happen to stock lots of health potions from a general goods or find them.)

i guess i can use food, but i might need some tips

Ideas:

1) Avoid taking damage. Get good at blocking and movement to avoid hits. Get high armor and resistances. Play smart with shouts such as Slow Time, Become Ethereal, Whirlwind Sprint and Unrelenting Force.
2) Use alchemy and stock up on potions.
3) Get a huge health pool to survive combat and rely on out-of-combat health regeneration. Go grab The Lady mundus stone for extra health regen. Find a ring and necklace with more, at lv 16+. Radiant Raiment is a good place to look. (Might want to prioritize resistances before regen, though)
4) Outdamage your enemies.
5) Become a werewolf, and against human enemies rely on feeding to heal yourself.
6) Get a weapon with the Absorb Health enchantment. Buy from a smith, find, or grab a unique like the Nightingale Blade (probably out of the question since no thievery?) or the Ebony Blade.

Just buy potions from merchants (and yeah, hit up Alchemists for potions too. That'd be the first place someone looking for potions would go to, after all). You'll tend to find enough in your travels plus the ones you buy that you should be ok. Just fight defensively, using a shield. Make sure you pick off as many enemies as you can from range before getting into melee... or just make an archer and hopefully kill everyone before they get into melee.

Depends on how modded your playthrough is going to be. With some of the combat rebalancing mods, this is a normal playthrough. Just the potions you find, and ones you can purchase from general goods merchants, will see you through with overstock. Especially if you are going one-hand + shield. Two-handed you may have the occasional issue, against Bosses mostly, but even blocking with a Two-handed weapon stops a lot of the damage coming in at you.

Only place I can see where you'll have issues is against Dragons. Depending on the difficulty level, you may find their breath attacks OP. If you are allowing resistance enchants, then it's again just a normal playthrough. Master/Legendary without those resists are going to be brutal against Dragons. Might have a few problems against Dragon Priests as well if you aren't allowing them.

If you want a solid challenge of this sort, throw in one of the Bartering overhauls that reduces sell prices and makes the economy not so "I have 1 million Septims at level 10"ish. Can actually be a huge gamechanging, especially if you restrict selling items to only gemstones, potions and scrolls. The economy in Skyrim is one of the worst I've seen in an RPG. Really unbalances the game with how much you can amass in a short period of time.

Concentrate more on evasion, blocking, and attacks of opportunity and you will do just fine even on the higher levels of difficulty.
