You can avoid quest altogether if you kill the cannibal that triggers the quest. It'll fail the quest and neither the priest or the cannibals need to die. You'll get some unique dialogue out of it, but it's not much.
As far as bugs, don't think so.
I remember I used a tool when I wanted to fix heimskr preach bug in whiterun that I could see the quest scenes, and there's a console command that allows you to advance a quest to a given scene.
If you get the scenes of the quest from console, you probably can advance it by commands.
I have a similar problem to get Shadowmere. I don't want to do the assassinations the dark brotherhood will ask me to... :P
My other play (in "oldrim") I just killed the guys (well, did assassination, but to the bad guys), and have been praised by the guards all around since then. (well, if I can say that's a praise).
You may find the quest name and scenes in console by trying 'help <part_of_name>'. Usually the quest scenes have names resembling the quest name, so shouldn't be too hard to list the quest scenes from the console.
Y'want my advice? Be a werewolf or vampire before doing the quest.
