Obtaining the Ring of Namira without eating
Is there any bug that allows be to get the ring without killing the priest. I want all the achievments, but also the thought of cannibalism higly disturbs me.

Pretty sure you can manually save before the event, then do what you have to trigger achievement. Once you get achievement, you can roll back to previous save and avoid quest. Use console command to get ring.

You can avoid quest altogether if you kill the cannibal that triggers the quest. It'll fail the quest and neither the priest or the cannibals need to die. You'll get some unique dialogue out of it, but it's not much.

As far as bugs, don't think so.

In order to get the achievement, I believe the way suggested by @Halcyform above is the way to go. Although if you don't want to do the cannibalism part in any means, all that would be left is trying to hack-advancing the quest by console commands. But this could break that specific questline in some ways (for example, by having the character alive when it was supposed to be dead, and so on).

I remember I used a tool when I wanted to fix heimskr preach bug in whiterun that I could see the quest scenes, and there's a console command that allows you to advance a quest to a given scene.

If you get the scenes of the quest from console, you probably can advance it by commands.

I have a similar problem to get Shadowmere. I don't want to do the assassinations the dark brotherhood will ask me to... :P

My other play (in "oldrim") I just killed the guys (well, did assassination, but to the bad guys), and have been praised by the guards all around since then. (well, if I can say that's a praise).

You may find the quest name and scenes in console by trying 'help <part_of_name>'. Usually the quest scenes have names resembling the quest name, so shouldn't be too hard to list the quest scenes from the console.

There used to be a mod that let you trick the cannibals by making a fake body with magic, not sure how well it worked though.

It exists still (Namira For Good Guys) but I think you don't get the ring if you do it like that, thus I don't think it'd trigger the achievement.
Y'want my advice? Be a werewolf or vampire before doing the quest.
