Anyway, since you can't give her gifts or do her any favors, all you can do is set her disposition in the console.
Open the console and click on her, then type
setrelationshiprank player 3
She should be back to her old self again, but she's a sentient AI psycho, so don't expect it to stick. You may have to do that New Game thing.
I don't blame her for not following you now.
Only way to get her to follow is to load a save from before the wedding or from before you asked her to marry you.
I get the whole "open the console" thing, but how do you click on people once the console is opened?
On a serious note though, I'd just let it be. I like to roleplay so I'd avoid load saves (unless I died or encountered a bug) and just let whatever outcome be as it is. In short, let your choices or mistakes define the character you play. Makes for a richer experience imo.
If you can't click on someone after you open the console (which you can't) then click on them BEFORE you open the console.
Not wanting to be rude here, but this is basic thinking 101
Anyway OP that's cold, "I know I left you at the altar but won't you return to being my obedient servant?", no wonder she refuses to carry your burdens, lol.
if you really want her back as a follower and you don't have a recent save before you proposed to her, you could try to reset relationship via console. obviously console commands like that CAN induce weird behaviour down the road, so to be extra sure keep a backup save.
