Why is my health written in red in the Skills screen?
Also, my max health also often goes down to 95. How do I stop this from happening?

It means that something is debuffing your health. Check your active magic effects and you should find the reason for it.

I only have the Shout active.

You dont have any other effects on you, sickness maybe? Do you use any mods that add hunger/ cold effects to the game?
Its in the tab where you also see effects from your armor and from shrines.

You have to go to "Magic". Then scroll down to "Active Effects" (it's at the bottom of the list). You should have several things listed there (beneficial and negative), so look close.

If there is something wrong, activating a shrine will usually fix it. Or a "Cure Disease" potion. Good luck

Go to a temple...touch a shrine of one of the Nine's. Talos shrines can be found in Riften and the crazy preacher guy in Whiterun.

You can also ask a vigillian of stendar for a cure ,or you can make a cure desease potion.
if you got the heartfire DLC you can also use garlic bread

that sounds like you got afflicted with Sanguinare Vampiris that after 3 days will lead to you turning into a vampire (which have both benefits and drawbacks http://elderscrolls.wikia.com/wiki/Vampirism_(Skyrim). most of the ways to cure it before the 3 days go by have already be lsited in this thread I think, once it does turn you into a full out vampire it gets a lot harder to cure

You can easily check all the effects by going to Magic tab and sellecting Active Effects.

There are many effects that can be related: potions, magic items, diseases, maybe food. Also, if You are playing in Survival mode / using survival mods it can be related to them (e.g. freezing due to cold weather / poor clothing).
Have you been doing the dawnguard questline?

Vampirism can be cured, You know. You can either override it when You turn into werewolf; or You can go to a certain mage that can help You to get rid of it.

Said mage is named Falion. Talk to an innkeeper and they will point you towards him in Morthal. He may not talk to you about vampirism if you haven't been told to visit him first..
