Start here, then click on the author's name and look at his files. He's done some superb overhauls to various monster's looks. Has 2k/4k alternatives so you can pick what is best for your rig.

Kaju made just a handful albeit very high quality so you'll probably want Bellyache's HD dragons along with animal & creature pack.

Those should cover you for the most part. If not - or you don't like a particular model, just browse the texture & model section. Oldrim textures work in SSE as well if you feel the selection is limited.
Edit: Ah too slow! Kajuan really is good and worth recommending.
I just took the 2k ones outright. No need for the main files. I think they are in the optional section just because the textures look best in 4k.
