Breton Magick resistance is just a convinience. If you want to virtually nullify Magick just activate the Atronach stone.
Now a dual weilding (daggers or mace/dagger) Illusion Assassin using poisons and a bow/crossbow for dragons in flight or long range frenzy poison application only, is where it is at.
Oh! ...and Invisibility is for wuss' only also.
The problem with Skyrim, is that the differences in starting stats are negligible. It really doesn't matter what class you choose, so pick your favourite. I generally play a Stealth Archer (as I love sniping from extreme distances), and will pick either Breton or Imperial. Two races who start with very little in the way of stealth skills.
Using Illusion is a fun way to play stealth, to be honest. If you get hold of Apocalyspe - Magic of Skyrim, you can have far more fun with it, by combining their spells with Vanilla. A bit of Conjuration, Alteration and Restoration can also be worthwhile. Pick what you think are the most useful ones to compliment your style. I tend to grab Summon Familiar, some form of healing, Alarm (A-MoS), Drop Zone (A-MoS), and whatever I think will come in handy. You don't need to solely rely on standard stealth tactics and Illusion to play a "sneaky" character.
Experiment. It's one of the best reasons to play.
There is no such thing as min/max in Skyrim.
true but in terms of resistance and stuff like that, you have to make decisions in terms of enchantments.
for example, do you want free illusion spells or more magic resistance

Unlocks enchanting, so you can put anything on any equipment. Again, I use the restricted version. Don't need to increase Heavy Armour on some Leather, and so on.
