Race doesn't matter, but Altmer start with a Fury spell.
So you can save like... 100 gold in the first couple hours?

Breton Magick resistance is just a convinience. If you want to virtually nullify Magick just activate the Atronach stone.

A stealth archer doesn't need Illusion unless you are a wuss.

Now a dual weilding (daggers or mace/dagger) Illusion Assassin using poisons and a bow/crossbow for dragons in flight or long range frenzy poison application only, is where it is at.

Oh! ...and Invisibility is for wuss' only also.

Every race can do everything. Especially Stealth Archer, which every race can do while asleep.

While (as mentioned) every race can do everything, the "best" starting race for a Stealth-based Archer is easily Bosmer. They start with 25 Archery, 20 Light Armour, and 20 Sneak. Khajiit are a close second.

The problem with Skyrim, is that the differences in starting stats are negligible. It really doesn't matter what class you choose, so pick your favourite. I generally play a Stealth Archer (as I love sniping from extreme distances), and will pick either Breton or Imperial. Two races who start with very little in the way of stealth skills.

Using Illusion is a fun way to play stealth, to be honest. If you get hold of Apocalyspe - Magic of Skyrim, you can have far more fun with it, by combining their spells with Vanilla. A bit of Conjuration, Alteration and Restoration can also be worthwhile. Pick what you think are the most useful ones to compliment your style. I tend to grab Summon Familiar, some form of healing, Alarm (A-MoS), Drop Zone (A-MoS), and whatever I think will come in handy. You don't need to solely rely on standard stealth tactics and Illusion to play a "sneaky" character.

Experiment. It's one of the best reasons to play.

isn't breton just generally the best race all around for min maxing though? it seems nothing really compares to him due to all his resistances and dragon skin

Nah, you can get equal or better resistances with every race. Plus the same spells and better versions of those too.

There is no such thing as min/max in Skyrim.

true but in terms of resistance and stuff like that, you have to make decisions in terms of enchantments.

for example, do you want free illusion spells or more magic resistance

Why not both? There is a standard perk that allows two Enchantments per item. Combined with methods of increasing the effects past the limit, you can easily get both. Or just use mods that increase the amount of enchantments allowed on equipment.

It's really not as complicated as you appear to be thinking it is.

If you are interested in said mods, check out these:

Multiple Enchantments
https://www.nexusmods.com/skyrimspecialedition/mods/2694
I use the one with 2/3/4/5/6, because any more is a little overkill. And even then, I rarely have more than three on any equipment (although, that is dependant on difficulty).

Multiple Enchantments - Ordinator Patch
https://www.nexusmods.com/skyrimspecialedition/mods/5267
For if you use the Ordinator skill tree overhaul. Worth getting Ordinator anyway. One of the best mods out there.

Simple Enchant Restrictions Remover
https://www.nexusmods.com/skyrimspecialedition/mods/5454
Unlocks enchanting, so you can put anything on any equipment. Again, I use the restricted version. Don't need to increase Heavy Armour on some Leather, and so on.

mostly because i want to have as much leeway with enchantments as possible.
