You can disenchant that necklace and put the enchant on a ring, chest piece and shield. Not sure about the magnitude of the effect and if you can get to 100% just with that.
Edit: Hevnoraak (dragon priest mask) seems to have immunity to both poison and disease.
It has spells just for paladins. Including healing spells that can cure disease.
Really you only need one, unless you're spending more than three days between raids.

They were, but in TESV they only have 50% resistance (same as Wood Elves).
