Are there any quests worth doing?
I found most of the game utterly disappointing so I started some theif guild quests. I thought the best side quests are usually the Thief guild or dark brotherhood, but nope.

The NPCs just fail at being credible, like when you smash the guy's vase. They start by playing though then almost beg for mercy without changing their facial expression.

The guy had no problem trading with me even after I smashed his vase.

Overall the dialogue options are extremely linear and limited making interacting with NPCs the worst part of any quest... Oblivion had potato faces and Skyrim has potato voices.

At this point if the MQ is boring and the guild quests too, is there anything left worth doing in Skyrim?

start modding or stop playing. if you found those quests boring idk what you will find fun. what is it you are looking for in a game?

Interesting quests /NPCs. 90% of mods are simply graphic overhauls and superficial stuff.

quests are ho hum in my opinion. Play Skyrim as an alternate universe you get to live in. Most of the quests are forgettable. Playing the game is not. Lots to explore. Lots to do. Nice loot and nice character creation and development. And this is without mods. Add mods, and the game becomes anything you want it to be.

Is there a mod that turns skyrim into an actual RPG? Btw I have put over 60 hours in it but at this point I really cant enjoy it anymore.

NPCs offer an average of 2 dialogue options... They really put all their effort in the immediate surroundings of the starting area but it gets worse as you start to travel.

i haven't found any, but i bet there are quest mods that will do a more hardcore rpg approach. Check Nexus. go to their search engine and type "quest". See what pops up.

Interesting NPCs adds a large collection of NPCs to the game that are better done than most vanilla NPCs (though a few of the voices leave something to be desired), along with quests relating to them.

Ravengate and Specraverse add questlines with original characters, and are done by the author behind Perk Ordinator and Wildcat combat. I haven't finished them yet, but they're pretty solid so far. Though the first voice from Ravengate you are likely to hear is terrible in my opinion, the rest are much better.

I also use the Wheels of Lull, a quest mod that focuses around The Elder Scroll's metaphysics and is made by an author nostalgic for Morrowind:

Finally, I've heard good things about Beyond Reach, and the VA is solid so far for me.

Of course, these mods are still bound within the limits of Skyrim's old, clunky, terrible engine, and the general confines of video games (so don't expect too many realistic facial reactions), but they use their strengths much more effectively and are better written than most vanilla content.
But to say that 90% of mods are graphical or superficial is nonsense. Look deeper. There are alternate start mods, perk overhauls, combat tweaks. All stuff that Skyrim doesn't do well.

Is there a mod that adds an unarmed combat skill tree? Kind of a bummer that im stuck on low level because of that

Ordinator adds unarmed perks to one-handed. I don't know if it reclassifies fist swings to be one-handed skill experience though.
