At the very least, you can just go around chopping wood and mining ore and picking crops.
Closest is a beggar, pilgrim, or traveling merchant. I am reasonably certain the beggar one starts you with nothing but rags in Riften but it's been a couple years since I tested it.

As for the actual jobs, I couldn't find any "work for someone else" quests either. On my current playthrough I used Missives to get started but at best you will be taking hunting/gathering quests to avoid the more adventurous ones.

There are a few mods out there to start with extra low skills for RPing a peasant but I don't know if that is what you have in mind. I personally used Classic Classes and made a custom class with the sort of things a random villager might be decent at as my major skills rather than the ones I'd be using to adventure later on so they'd all be at 5.

EDIT: I also suggest using "Campfire", "Frostfall", & "iNeed", for a more immersive experience;

Also I suggest using Skytweak, here's a guide on how to port it;

And maybe thus one does help aswell;

That's all I can really think of, as of right now.
I recently started playing a pure bard. Expanded Bards College mod. Allows you to play any of the instruments at the Inns for gold and free room for the night. Level up as a bard and you can then play for the different Jarl's. When not "barding" i am doing the odd jobs, chopping wood, collecting things.....
Pretty good and fun mod. All the animations are there for the instruments, lots of songs and you can import your own...
Become a Bard.

Yea, it's pretty fun, combat's hard to get used too
I've found when I have something specific in mind I often have to make my own patches for mods. Economy balance specifically, since paying out too much and charging too little is very common.
It isn't that hard to do little things like adjust the amount of gold a quest reward gives out or the value of an item. Though if it's using vanilla favor rewards for doing a job you might have to change more than you intend.
