1920x1080 is 2K resolution, unless you're talking about texture resolution? In that case, I'm pretty sure the vanilla textures are 2K x 2K and scale accordingly.
Note that not everything in the game can have 2K textures all the time, at least not without running a powerful system.

I think you can make your game look really lovely with just those 2 mods alone. I actually use performance version of all texture mods, including 1k instead of 2k. I think 1k is better than 2k because Skyrim is a bit blurry to begin with so not only do 1k textures match better with Skyrim overall, but you won't notice much difference between 1k and 2k and your computer will thank you.

you sure that vanilla is 2k tex? If I recall right, SSE uses mostly 1k or stretched 1k textures.
as for the last paragraph, that's wrong. you probably confuse it with 4k tex resolution. and even then you should not have problems to run everything on 4k textures with a powerful enough card on Full HD or 2k resolution.
Sometimes people use the term 2K for 1440p resolutions, while that's actually 2,5K.
(It all has to do with the pixel count.)
But, whatever. For some graphic enhancements, I would also go for:
Static Mesh Improvement Mod - SMIM[www.nexusmods.com] (and use available patches for other mods in use) and:
Enhanced textures detail (UV-tweaks)[www.nexusmods.com] (including available patches for other mods in use).
They are not required mods, I personally like the improvements they deliver. (Be it at 2K, 2,5K or 4K.)
I haven't gotten much into Noble Skyrim or the Static Mesh Improvement mod, simply because I'm on a low end PC, but what I've seen of them looks nice. I believe EpicNate, on youtube, has a video about using portions of multiple world textures, to create a very nice Skyrim.
I have tried 3d trees, 3d rocks, and blended roads. Looked great, but it was straining my poor computer to the limit, so had to make some cuts. If your PC can handle it, I think you'll be pleased with the look.
