So is it true that the Unofficial Patch lets you remarry?
I've found stuff which suggests that this is the case but I'm not willing to murder my spouse just to check. Can anyone confirm if you can indeed remarry with the Patch?

I have no idea but you can always make a save murder them and try and marry someone else if no one gives an answer

UESP states that if your spouse dies you can remarry. I'd say do as suggested save and try.

Lol. I have visions of taking your spouse to the Temple of Mara in Riften, introducing them to your other love interest, killing the spouse, then asking the other one to marry you. It would be like a scene from "Death Becomes Her".

No, in the base game if your spouse dies, you are still married to them..... Bethesda doesn't think things through

Guru's divorce mod on nexus lets you divorce without needing to kill anyone, resets the marriage quest and resets them to their original home. Just have to activate an added shrine in the Temple of Mara

And here I felt bad bringing my wife with me to divorce her (wanted to mke sure where she went when she was dismissed :P )

Okay, I tested it, I'm pretty sure that it works. I, ahem, killed my wife, then went and tested it on a mercenary. I didn't actually go to the church, but I got a quest to go see Maramal about the ceremony.

You can do it with console commands but apparently in Skyrim divorce isn't a possibility without godly intervention from the console god. Haven't tried the divorce mod but that ought to work too since it's a matter of some console commands to change factions and reset a quest.
