And it sounds more like it affects the weapon, not the screen.
OP, is it just the combination of health and stamina? Or is it just absorb health?
How about this: install the unofficial patch, test a sword exactly like the one you have, and see if it has the same issue. Given the... er, delightfulness of the rest of the thread, I'd at least verify whether the unofficial patch actually fixes this issue.
Other than that, I'm not really sure what could be causing it or what could fix it. Perhaps avoid the problematic enchantments/combinations in the future. Just how dark does it get, exactly? A screenshot would be interesting.
