Your choices don't matter because there is no consequence for your choices.
As far as Bethesda is concerned you're only going to play the game once so they let you do everything in one playthrough.

Skyrim pretty much abandons all prerequisites and exclusivity when it comes to their guilds and the like, as well as consequence.
I mean, Morrowind allows you to join and/or gain favor from multiple opposing factions as well, but it's explained as a necessity for the prophecy and so on. Skyrim just sort of lets you just...do whatever you want, and associate with anybody you want, with far less tools to do so in a more restricted world.
