Sofia isnt using ice bolt at all, she basically just a 1 handed sword user with nothing else. Can anyone assist me?

Talking about a staff? Sofia does whatever she feels like doing. Having lots of armor but fighting nude.

I rather have the reverse problem... Since I do not fancy magic I want her to stop using it and gave her a good bow instead but she keeps using ice shards to penetrate enemies.

That's why I just let her fill my manor, naked in my bedroom, understandable, in battle, what the... Back to the topic, though she does use whatever she likes, from my observations she uses ice spike and fire bolt as ranged weapon since I have never seen her use a bow. And since she levels with the Dragonborn she may also use chain lightning when she has enough magicka. Seems to me she uses these in a distance mostly.

Spell users often end up using either spells OR weapons. If you remove her sword, she will likely end up casting spells constantly. If you're going for a more "Battelmage" type of deal, that doesn't usually work. If the sword is too good (Better that the spell), she will always favor the sword.
