How do my followers always have 10 times more health than me?
Like literally I get killed in one shot by an arrow from some old draugr lord but my thane took like 10+ hits before being just almost-killed. I got tons of armor, I enchanted stuff to give me frost and fire and shock resistance, I leveled up a bit of health, I used alteration spells to give me even more armor and somehow none of it is enough to stand up to anyone.

First your followers do have way more health than you. The hp formula for Lydia for example is:
100+(PC-1)*11,7 (PC is the level of your character).

Also when you get oneshottet I assume you play on master or legendary. By increasing the difficulty you recieve more damage and enemies recieve less.
However, your followers are affected the exact same way as enemies meaning they also recieve less damage.

At legendary, enemies damage taken gets multiplied by 0.25 while your damage taken gets multiplied by 3.

So your follower not only has more health than you, they also recieve way less damage.

Oh ok I just thought a higher monster level meant like a little more helath a lot more tactical skill, but I guess it's just the other way around.

Alteration does not work that great at high difficulty settings. What does work is high smithing skill, boosted by enchanted gear and alchemy.

Well I guess, but at that point isn't it just the same as setting the AI difficulty to novice?

Not really. At legendary difficulty, you have to think about how you are going to win, but you can do it. At low difficulty, you will always win unless you completly give it away.

I mean, my dragonbone bow does over 100 dmg without enchantments boosting damage or adding elements. Skyrim isn't a hard game, it's one of my biggest complaints about Skyrim, it's just constantly way too easy.

I don't think I've every done over 100 damage unless I'm sneaking and have all damage bonuses for archery unlocked. But then again I always set it to max difficulty...

My 30's toon does 500 damage with unenchated mace without potions. I have armor way past cap. Still, I got killed a couple of times doing final fight of Folgunthur fight for not doing it right. On legendary, you have to play right to win.

Or, you could literally jump one inch into a mountain rock and then every AI enemy in the game is helpless because they somehow don't know how to get to you.

Maybe. If that is is a glitch, I will not do it. If that is fair, I am willing to try it. but, I have too many playthoroghs that I quit because it got too easy.

That's literally the easiest way to win a fight. Somehow the AI don't have any jumping programmed into them, so if you jump anywhere they can't walk to, they can't melee you. As a bonus, if you can jump to a spot that's out of their range then the only things in the game that could possibly reach you are advanced destruction spells and maybe shouts, which would only be a problem if you have no wiggle room on whatever rock you're standing on. See a giant chasing you? Jump up some rocks. See a bear chasing you? Jump up some rocks. See a Draugr Deathlord chasing you? Jump up some old rocks, only thing you'll have to worry about is destruction magic, and maybe a shout or two which you'll have time to react to as he charges up.

Yeah, I don't think anyone really argues that Skyrim is a hard game. I don't think that was ever part of the appeal for anyone anyway. Probably my favorite modern RPG of all time is Witcher 3, which is not difficult by any means. That being said I just think Skyrim fell short of too many other things for the combat to not at least be really solid.
