There isn't much to learn for how to use it. You drop it in a folder and tell NMM where it is. Then you can click Supported Tools in NMM, Launch LOOT, then click SORT PLUGINS, then click APPLY. Done. Keep in mind the plugin list in NMM will not update in real-time after that to match until you relaunch NMM... but you don't have to relaunch it to play the game with the newly sorted plugins. The reason people use LOOT is because nobody just stops with 5 or 10 mods, they install hundreds. Either way, you can sort your plugins manually if you want in NMM in the plugins tab.
One last noob question (I hope). In mod descriptions it keeps talking about needing to have a certain version of ES such as Skyrim Special Edition V1.5.3 or greater in order for it to work. If it's completely updated through steam, I'm good right?
I'm starting to understand why people have hundreds of these mods. Now that I'm somewhat confident I can get them to work, I'm pretty interested in finding out what else there is even though I haven't started playing these ones yet.
One last question (promise!): In the future if I add more mods I'll most likely need to start a new game, correct? Or is it just some mods I'll need to?
