You can do the quest anytime you want, countless times. So you can become a vampire more than once.
Sanguinare Vampiris will transform you into a vampire after 72 ingame hours, during this 72 hour timeframe you will beable to cure yourself via a cure disease potion or via the blessing from a shrine, you say this isnt working so perhaps you should try it again, anyway when you become a vampire you will beable to cure yourself by asking Innkeepers for "rumors" and they will tell you about Falion in Morthol which will start a quest called "Rising at Dawn", for this you will need a filled black soul gem.
Also I dont see the problem with being a vampire, go and download a vampirism overhaul and be one however the vanilla vampirism system is inconsitent, lacking in features and poorly made, I could do a better job then Bethesda at making a vampire system infact I already did in one of my vampire mods, it is called "Curse of the Vampire SSE" and you can find it on the Skyrim Nexus and it's pretty big, it overhauls everything by mixing in classical folklore and is highly customizable, it even has NPC support.
