First of all, I have no experience of playing Skyrim on two monitors, but I have done something with dual monitor-playing in the past.
If you have an NVIDIA-based graphics card, you can go to the NVIDIA control panel, and select "Set up Multiple Displays". I believe this should give you the option 3820x1080. On this forum[www.wsgf.org], someone says that you'll have to edit the iSize in your skyrimprefs.ini so it allow you to choose that resolution.
However, using double monitors for Skyrim is terrible. It's fine for screenshots, but a huge part of the user interface is in the middle. If you really want to play Skyrim on multiple monitors, you'll want three, and download a mod[www.nexusmods.com] for a surround experience.
but , i could move to a spot and take the ultra wide screen shots ,
that's all i would try to do .
look in video card properties for 3840 x 1080 , too . ok .
i have one montor , but i can run the other head into the HDMI
capture , that is detectable as 1080p , thus i can get Dual Head
to turn on , I think . that's why i was asking if it will take ultra wide
images , cause the setup is still slightly skewed here .
and manually set .ini file too , in skyrim , ok .

Solution 1: Go to \Documents\My Games\Skyrim Special Edition\Skyrim.ini and add the following if it's not already there:
[General]
SIntroSequence=1
Then save and edit SkyrimPrefs.ini and change these settings:
bBorderless=0
bFull Screen=1
iSize H=1440
iSize W=3440
Note: UI might be cut a bit but it's the best solution so far until we get SkyUI for SE.'
then i tried it on Witcher 3 , and again , lots of FOV distortion.
And , for some reason , MOST of the wide screen view was alwyas on
monitor 1 ,...for both Skyrim and Witcher 3 .
Witcher 3's screen shot was 3840 x 1080 but the HUD
was Centered on the middle 1920 where it would normally be
for 1920 x 1080 mode .
and NOT at the edges of the wide screen 3840 x 1080 screen shot .
Not working with the AMD Soc GPU APU R7 .
i set eyeFinity too , the desktop extends ok ,
but not up the challange for multi-monitor gaiming .
