Don't follow the regular routine, try a run all the way to Dawnstar for example. Install Bandits in Skyrim or a mob inducing mod. Restrict yourself to only clothing (maybe your character is allergic to metals), or a certain type of metal. Use a weapon type, stick with it, and never change. I try to pick mods that are difficult and combat intensive. Maybe your a chemist. And can't use weapons at all. And can only use one school of magic. Get a mod that supports that idea. Get mods that make your character shine or make it difficult. To me, that's the fun part.
Cheers.

As for making your next playthrough more fun well.... did you try out the legendary difficulty? it makes you change how you play quite alot.
