and do the quest
then you have an item which allows you to heal your health and stamina quite frequently :)
I usually break away from the main quest right after meeting the Greybeards to get something related to my run (Gloves of the Puglist for unarmed runs, Thieves Guild armor for light armor runs, certain spells for mage runs, The Pale Sword and Ice Form for one handed runs, etc), and then continue with the main quest until I happen to be in the area for a good sidequest.
Worth pointing out that the main quest never takes you near Falkreath. It's basically one big sidequest area.

Paralysis works well against that creature. I usually wait until I have at least one Paralysis poison and I'm able to summon a Flame Atronach, since it has a weakness to fire. The ingredients for a Paralysis potion aren't exactly common, so it usually takes me awhile to be able to make one, and a Flame Atronach requires a Magicka level of at least 130. So I need to gain a few levels for that. But I don't want to put all my points into Magicka right away, so I'm usually at least level 12 before I head that way.
