The game does not keep score when I am playing against AI? What's up with this?

hello jm52. This is usually the case when you aren't following the rules. We should do a better job at explaining rules within the game:

a legal serve starts by tossing the ball, and then before the ball hits anything else, you hit it with your paddle. After this, the point has started. After it hits your paddle, in order to be a legal serve, you have to hit your side first, then it bounces over the net, and then it hits the other side.

You need to make sure paddle->ball contact occurs behind the line of the table.

The moment the ball hits the other side after all of this, it becomes the responsibility of the opponent to return the ball.
