Eagle Controls

I have the basic ones like moving forward and up and down but I'm not 100% How or if I can land to grab things or anything else I can do as an eagle, any advice?

Simply put, you can't do either, landing or grabbing. The eagle allows you to fly and explore parts of the world that would otherwise be unaccessible, but its drawback is that it cannot do anything on land nor acquire collectibles.
