Now I use sword and dual sword but it takes a lot of practice to use those weapons to their fullest.
The basic Sword is middle of the road for everything. Master it, and you'll never be at a disadvantage.
Backup weapon I'd likely go with an Axe or the above-mentioned Odachi. Those are largely going to be for breaking stamina on tougher enemies that block until you unlock some more Spear skills or get more comfortable with them.
Tonfa is also a decent choice due to some similar scaling to Spear, especially if you want to pick up Ninja Skills/Ninjutsu, and offers faster attacks, less stamina consumption, and great defensive options(It has a skill called Demon Dance which basically give you a dodge on your Ki Pulse to regain Ki/Stamina. Later, you can use it to cancel out of any attack so you cna defend or reposition.) But, the tonfa is a little more complex--it's worth the payoff though IMO.
Guardian? If you're dying a bunch, I recommend Isonade or Fuse-Ushi, both offer passive healing bonuses and increase your HP. Fuse-Ushi's guardian attack also knocks almost everything in the game down, outside of some bosses.
I started with Katana and... I had broblems with breaking gards :( Now I use Axe in mid stance and it is much better, and nice combos. And sometimes Odachi, but prefer low stance as it is faster...
Your starting weapons do not matter. Neither does your starting spirit. You'll have to take most of your stats to 15+ anyways.
Mid strong attack is a thrust that overcomes most humanoid enemies. High stance quick attacks are good for hitting demon horns. Swing once and get out.
