Well he doesn't have beaten nue, so he can't know its description...
I found that it is easier to focuss on what the elements do when you apply them to your weapon and go from there.
1. Fire = obvious and has an ok DoT. Works great against Umi-Bozu and similar blobs
2. Poison = Bigger DoT for almost double the time. Overall more useful then Fire.
3. Lightning = Slows opponents down a little
4. Earth = Slows/stops opponents Ki regeneration. Perfect against humans. Especially when combine with the Omnyo magic that stops Ki regen as well on target. Once one wears of you can combo the other after it.
5. Water = next elemental attacks do double damage. Or close to it. Works great against Firewheel Monks and the like...which is obvious.
6. Wind = no idea...never cared for it to find out.
I usually have Lightning, Water on my shortcuts. Switching Fire and Earth depending on the area and opponents I'm fighting.
In case of Nue I'd go with Water Element and try to do double damage. Making the hits you do count even more. Then again..his lightning is weak against water. Which is a nice extra boost.
Exceptions exist in a few places: I believe the earthen stone sentries are weakest to water along with firey wheelmonks losing to water. There's also the Orochi but that exception is that it is plain weak to every element
Wind, like mentioned, is a SIGNIFICANT debuff to attack damage. In the area of 50% at least. I've heard some people report 75%, although they may be exaggerating.
other than that theres no logical sense to what beats what, its just random for the most part
