Am I supposed to be doing more blocking than dodging?

The trick is to hold block and dodge, you get the best of both. :D
Depends on the situation, your build, and your playstyle. I think there's a place for both and that it's important to know when to do what.
I never blocked until Way of The Wise.
Been wondering the same thing. Sometimes enemies seem to destroy my ki with one hit and other times I spend way too much energy trying to dodge everything only to find their hits bounce off my guard like pencils.

I wish there was a better way to tell.
If you get hit you NEED to block, I tried to evade and you get stunned for a moment, so they usually get a second hit, while with blocking they don't.
Blocking makes a few bosses extremely trivial, especially the centipede boss who does almost no ki damage when you block.

Yeah, blocking is weird, there are some attacks that simple conservation of momentum should render unblockable that are, in fact, not hard to successfully block.

I was doing this when I just started playing (muscle memory from other game) and I was destroyed every single time. Took me awhile to separate dodge from block. Does this really work? - have not tried since then.

I believe if wearing Light armor, I'm out of Ki when guarding not when wearing Heavy armor.

Yeah it works, if you ♥♥♥♥ up your dodge it gets blocked. Important when you get to the stage of everything ♥♥♥♥♥♥♥ one shotting.

The dodge iFrame is small, hence if enemy is attacking you with a combo move, you will get hit when dodging. Also, if you run out of Ki during guard you may not have enough Ki to dodge.

Pretty sure it's only in one of the stances that blocking while dodging works. Either low or mid stance.
k. Will try to re-learn then. What is iFrame BTW? I got the meaning, but why do you call it iFrame instead of invulnerability window?

Age of the internet. Meaning if it can be shorten, it will be. iFrame is easier for people to write out than invulnerability window.
