I'm looking forward to the responses ;)
I don't think 'build' is what you are looking for. Also, I doubt you would consider Shurikens, Bow or One-shot Living weapons to be real builds as they do not engage with Nioh's greatest strength: its sublime combat and emphasis on reflexes.

That said, a different weapon is enough to change things up within a 'build' because some skills are more optimal for status application, animate faster or have hidden attributes / combinations unknown to most people (Spear's Chidori + Stability or Axe's Roar + Knockdown followup etc)

Even Spear has a lot of subtley within a single build. Spear low stance is one of the best for poke, and has the highest sustained DPS with elemental damage because for some weird reason, it has range, speed and flexibility. And some skills may see more use over others if you run lightning or wind etc.

Also, WotN completion really doesn't offer a complete build of any kind. Some of the useful graces are locked away in the abyss (Magatsuchi is pretty good as is Ame-no-Uzume if you know what you are doing, among other cool combinations)

Your new character should be built around the weapon that interests you most. If you want something easier to play, the Odachi is simple but powerful. If you want complexity or options, then go Tonfas or Kusarigama.

For example, the Kusarigama has the option of maxing both dex (primary scaling) and magic if you choose to do so, allowing for some changes in standard builds not usually available to other weapons.

Finally, mastery over a single weapon is a different story regardless of build. The spear you are using is still capable of much more, and its available builds require a different playstyle and stance that differ based on how you approach the situation.

Thinking of playstyles vastly different from my current character. Never mind if they are cheese builds. Anyways I have experienced Countless deaths and been through the process of figuring boss movements and attacks. I take it now as a good time to combine that experience and do cheese stuff to give them the middle finger as revenge.

Haha, pick up the Kusarigama then, or the tonfas. Kusarigamas are my current favourite weapon. Finally figured out how to get them to work and combat's very smooth with them.

As for cheese builds, you don't really need the one shot builds until the duo boss fights in abyss. Just use Daiba Washi's knockdown, shoot human enemies in the head during their living weapon forms or exploit their AI if you've figured them out.

Daiba Washi pretty much makes all human bosses a free kill, with special shoutout to Maria who can be consistently knocked out of her living weapon form as she's readying it.

I thought of fighting human bosses via ki depletion. Water pots, and the talisman that lowers attack but increase ki damage. Forge some ki damage stats and final blow or grapple damage.

Idea maybe good or maybe it sucks. But still a fun and different way to play.
If you want to fight the bosses the normal way, then the weapons that suit your playstyle would be either Tonfas or Axes.

Tonfas deal exceptional ki damage at the cost of falling behind in raw damage

Axes have the highest break stat in the game, especially Ryomen Sakuna (?) axe but can deal good, raw punishment.

However, Tonfas are usually considered the harder weapon to master. As for axes, on my new character (Way of the Strong/ WotD) at the moment, I can tell you axes only have about 2-3 (I would argue only 2) viable skills in most realistic situations. Can be really boring for most people, but I find it fun so far.

I'm only at 4th region, spamming earth carver all day right now, which other skill did you find useful?
Titanic strength is axe's signature move and in my experience, seems to have a larger than usual bonus for applying status on its first hit when executed from high stance.

Roar is Axe's cheese against humans. It guards against all incoming attacks as you dash, and if you practice the combo well, will hit just enough times to knock humans on the floor for a finishing blow.

Tri-Spark costs almost no ki, deals decent damage but defines itself by dealing a lot of ki and guard damage. I mostly use it after enemies pick themselves up from being knocked down by roar. Also human enemies usually will hold block if you spam this in a corner.

By the way, if you play lightning build, Lumber Chop becomes super fun as a high skill ceiling ability that leverages on your mastery of the game to know when to abuse it. Also special note: it knocks down human enemies even if you don't fully charge it.

So I'm tentatively going for a "ranged" build.

Not been using firearms much for previous character that I needed to grind kills for prestige points.

It will not be a throwing build. Closer to saika magoichi style. Also looking at how to plan around ki damage build for melee as I go along.
I do believe a pure bow build exists but not the same for firearms. That's because only bows can roll for the incredibly rare [Unlimited Arrows] property that I think, is unique only to abyss.

But if you are not quite specialising into only ranged weapons, then I guess it's ok.

Dealing Ki damage matters more with the weapon you use, in this case Tonfas are really the only way to go. Other weapons like the Kusarigama can deplete ki too if you land multiple hits in succession but in almost every case, if you upgraded your gear normally, enemies will be dead long before you deplete their ki.
The only vastly different playstyle from "Tank" (assuming you mean heavy armour) Would be for high agility + low stance exclusively.

Similar to dark souls, the more you develope a single character, the more you become an Ace-of-all-trades.

Lowbie characters are great for difference, So I suggest instead of builds, you play the game with challanges.

Sword/fists/Sickle+Chain only..

no living weapon,

level 50 max.

one-life.

so on and so forth.

Otherwise, focusing yourself around a new weapon type you've not used before is the best way to 'Build' a character, But since there is no class difference, It's hard to consider anything a 'build' and more of a player choice of equiptment over skills/ability.

This is why I struggle with allocating Stat, Samurai and other skill points - almost like player is expected to focus on a weapon and/or buff types.
