Why do you need AAA graphics in Souls-like game? We're here to suffer, are we not?
Watching more of the video I see that Guardian spirits work somewhat differently and the shrine menu has more options than it did before, though most of them aren't available in the alpha.

I see no problem with this. When you hit pure crack, you don't need to start cutting it with scented candlewax in an effort to make it different; I'll take the crack just fine.
Sekiro have been out in the field for a year+a new Souls-like game from them was announced. Dark Souls doesn't need to be about the FIrst Flame, Drangleic/Lothric/Londor to be Dark Souls.
Just look at the Nioh itself
A year, or - as some call it - 3 months.
Nioh on the other hand has presented a complex combat system since from the first game. Now we getting character creation that was something that people complained a lot. Also there are new improvements to combat with the Yokai transformations and probably more things like new attack animations for weapons and new weapons, improved skilltrees and other stuff related to combat. Also the story on Nioh had well worked cutscenes, drama and envolves japan mythology with a great level of fidelity. About the graphics there is no need to improve it above what it is if it mean it will compromise fluid gameplay or other technical settings. Also about art direction and level design there is not so much they can change, because the game is meant to take place in a real feudal japan period with some historical events involved. So messing too much with area design and art work would completely mess and destroy the entire game atmosphere.
100% this. Thats why i am so hyped for nioh 2. I am so very glad they stick to the roots with some new stuff added on top of that.
I hate it when games try to invent themself new and completly fk it up then. Jagged alliance is doing this since 15 years. And it hasnt worked a single time.
