Anyway, the whole part after the credits, looks all kinda forcedly attached.
There is one main mission after that and a few optional "free" (at that time) super hard extra content. Those were not available on release on the PS4.
SPOILER ALERT:
after the main mission The Demon King Revealed, where you kill Kelley, you have cutscenes with the conclusion of the story, Credits, then other main mission appears.
Queen's Eye, etc...
It's kinda weird. Never happened before, in other games, that main mission continues after credits rolling.
There is nothing weird about it. You get one more mission. It is easy but the boos is hard. I had a lot of troubles with it, but I was new to Nioh. But after you learn the gimmick you can easily beat him and can be fun.
So I don't see why you feel it is weird of forcefully attached and doesn't really have to do anything with difficulty.
The hard bits are extra free missions you got and those are indeed meant to be an extra hard challenge, like the return of gourd. I'm dreading that mission a bit on way of the nioh...
Also i'm looking forward to moment you see "The Trail of the Master" boss of this sub-missions for me looked like a big "SCREW YOU" from devs, literally made me rage-quit and uninstall the game(got back in a week tho)
I think there is nothing wrong with this design: keep the main missions "easy" and predictable, mostly one on one fights with bosses that are super close to a shrine so you can re-try them with very low downtime. Anyone can finish the game, either by skill or by out gearing it.
And create a bunch of hard side-missions, that will challenge you and mix up the formula, from gauntlets to fighting a lot of weak foes to fighting multiple bosses.
But the mission you are talking about is not that hard, but only after you learned to deal with the chicken on its own. But I do admit, the first time I encountered a two chicken fight, I rage quit too.
But on a "SCREW YOU" scale, this is at most a 3/10 when compared to some other side missions...
