Defiling does add 1 line or replace 1 exisiting line if it's maxed out with a special set bonus but that's a higher difficulty thing.
Additionally, some weapons have inheritable stats, indicated by a [] > [] icon. Maxing out the weapon's Familiarity (the blue XP bar on its stat page) and using it as the Material (lower selection) in a Soul Match can add the stat to the Base (upper selection) weapon, or replace it if the Base weapon already has an inheritable stat.
